Ingredients (makes a 900g cake)

A
175g butter, softened
130g organic coconut sugar (feel free to use brown sugar)

B
3 eggs
1 tsp vanilla paste (can be substituted with vanilla extract)
1/2 tsp coffee oil (can be omitted or substituted with coffee extract)

C
140g self raising flour
4 tbsp cocoa powder
85 ground almonds
1/2 tsp baking powder

D
100ml milk

E
50g mini semi sweet chocolate chips

黄油 175克,软化
有机椰子花糖 130克(可用黄糖替代)

B
鸡蛋 3颗
香草糊 1小匙(可用香草精)
咖啡油 1/2小匙(可免或用咖啡香精)

C
自发粉 140克
可可粉 4大匙
杏仁粉 85克
泡打粉 1/2小匙

D
牛奶 100毫升

E
迷你微甜巧克力豆 50克

Directions/做法

烤盘抹油、铺上烘焙纸。B食材拌匀、待用

– cream A together till light and fluffy
将 A食材打至蓬松状态

– add in B, and incorporate well
加入 B,拌匀

– add in C (3 additions) and D (2 additions) by alternating the addition, ending by adding C
C (分三次)和 D(分两次)食材交替加入蛋糊,以 C收尾

– lastly, fold in E
最后拌入 E食材

– scoop batter into pan, and bake in preheated oven of 160 degrees for 45 mins or till baked
面糊倒入烤盘,送入预热至 160摄氏度烤箱烤 45分钟或烤熟即可

– allow cake to cool in pan for 10 mins before removing to cool completely on wire rack
烤好的蛋糕在烤盘中冷却 10分钟后才脱模、挪至冷却架完全冷却
