i have made 烧果子 in the past but till date, i still do not know the exact translation for this ( ̄~ ̄;)… japanese call it baked cake.. anyway, if you know how this should be named, please educate me 〜( ̄▽ ̄〜)…
Recipe adapted and translated from 小美
Ingredients (makes 20)
Dough
40g icing sugar
5g cocoa powder
pinch of salt
1/4 tsp baking soda
1/4 tsp baking powder
5g maltose
10g melted butter
10ml whipping cream
32g egg
23g chocolate jam
100g cake flour
Filling
300g chestnut paste
20 de-shelled chestnut
Decoration
egg wash
white sesame seeds
Directions
– divide chestnut paste into 20 portions (i.e. 15g per portion) and wrap a chestnut inside each portion. wrap with cling wrap and set aside
– sift cocoa powder, baking soda, baking powder and icing sugar. add salt, and maltose. mix dough well and pull into strands
– add in melted butter, whipping cream, egg, and chocolate jam. mix well
– sift in flour and knead everything into a dough. allow dough to rest for 10 mins
– after resting, divide dough into 20 portions
– wrap a portion of filling into each portion of dough and shape into tear shape
– brush with egg wash and coat with white sesame seeds on the wider end
– bake in 190 degrees C preheated oven for 15 mins
Personal notes:
– i used nutella for the chocolate jam
– poppy seeds were used instead of white sesame seeds
