Ingredients (makes 3 large mushroom head muffin)

230g cake flour
50g sugar
1/2 tsp salt
2 tsp baking powder
65g coconut oil
1 egg + 1 tsp vanilla extract
65g milk
25ml lemon juice
zest from 2 lemons
40g walnuts, lightly toasted and chopped

蛋糕粉 230克
糖 50克
盐 1/2小匙
泡打粉 2小匙
椰子油 65克
鸡蛋 1颗 + 香草精 1小匙
牛奶 65克
柠檬汁 25毫升
柠檬皮 2颗
核桃仁 40克,稍微烤热后、待凉切颗粒

Directions/做法

IMG_8380– preheat oven to 240 degrees C and line muffin pan with liners
烤箱预热至 240摄氏度。麦芬烤盘铺上纸托

  • mix flour with sugar, salt, lemon zest and baking powder
    面粉、糖、盐、柠檬皮和泡打粉混合

  • add in liquid ingredients into dry ingredients and mix well
    将湿性食材加入干性食材。拌匀

  • batter is very thick. divide into 3 equal portions, and place into muffin liners
    面糊将是非常浓稠。分成 3等份,勺入麦芬纸托

  • turn temperature down to 220 degrees C, and bake muffins for 10 mins. then reduce to 200 degrees C and bake for a further 21 mins (please tent muffins with foil once it browns)
    烤箱温度降至 220摄氏度,将麦芬烤 10分钟。再次降温至 200摄氏度继续烤 21分钟。麦芬上色后,盖上锡纸以免顶部烧焦
